Chocolate Marble Cake Recipe

What could be more exciting than baking with olive oil?

Here's a great recipe for chocolate marble cake.

Ingredients:

  • 6 eggs separated
  • 2 cups of sugar
  • 2 & ½ cups of all purpose flour
  • 1 TBSP of baking powder
  • 1 cup of olive oil
  • 1 cup of milk (or 1 cup of orange juice) * I prefer with milk
  • ½ package of unsweetened chocolate chips (or 2 & ½ TBSP of cocoa powder) * I prefer cocoa powder

Preheat your oven at 350F.

Beat egg whites until firm.

Slowly add the following ingredients, one by one, while constantly beating until the batter is smooth:

· Sugar

· Egg yolks

· Olive oil

· Milk

· Flour

· Baking powder

Sprinkle the inside of a well greased 10 inch tube pan with sugar.

Pour 2/3 of the batter into the pan.

Add melted chocolate (or cocoa powder) to the remaining batter and mix it gently.

Pour the chocolate batter over the white batter in the pan.

DO NOT MIX THEM.

Using the blade of a knife, gently create some swirls inside the batter.

Bake for approximately 50 minutes at 350F or until you can insert the tip of a knife and it comes out dry.

Let the cake cool down before removing from the pan.

Now, you can make yourself a nice cup of tea, coffee or hot chocolate, and enjoy it with your delicious chocolate marble cake. :-)

Why is olive oil so good and yet so healthy at the same time?

We're used to having to choose between the two. For example, when we're presented with food that tastes like cardboard but we're told is full of organic, unsweetened fiber. ;-)

Well, olive oil is mostly composed of mono unsaturated fatty acids. These acids can help lower the risk of heart disease by lowering cholesterol levels. They can also help normalize blood clotting and be beneficial to blood sugar control (re: diabetes). Olive oil is rich as well in antioxidants and in vitamin E, which are believed to play a role in cancer prevention.

So, enjoy olive oil in its many uses, mainly culinary ... and remember that the secret is to add olive oil to other quality ingredients (e.g. tomatoes, feta, arugula, bocconcini, etc) to end up with absolutely delicious and healthy food!
